Our Story · Low and Slow
Reggie started barbecuing as a hobby in 1994, stationed in Germany. Pork ribs were cheap there, so he bought a lot of them and experimented with rubs and seasonings until he found one that tasted right. At Fort Campbell he kept at it, adding more meats and flavors — and gathered a following of friends who wanted him cooking at every barbecue they threw.
One day it hit him that he could sell his own barbecue. He saved up, built his own concession trailer, and parked it at the Night Stalker’s Store, where the line kept growing. A first restaurant followed — and that led to the spot you’ll find today on Trenton Road in Clarksville, Tennessee.
Three decades after those first racks of ribs, the smoke hasn’t changed. Now we pack it cold and ship it out once a week. Same fire. Same wood. Now it leaves the building.
